Flying Flapjacks!

We have a little tradition in our family.  Flying Flapjacks!  Our oldest who was two at the time asked his daddy to make him "flying flapjacks" after watching an episode of Little Bear where the Daddy Bear makes pancakes for his family.  So, usually on the first day off Daddy has in his shift we get up in the morning all excited to make Flying Flapjacks!  Daddy and the boys make the flapjacks, Daddy also makes the eggs (basted - the best) and I make the bacon and set the table.  All the while sipping hot delicious Kicking Horse coffee!

So here is a little slice of our Flying Flapjack tradition.  (Just remember that I am supposed to be doing my jobs all the while taking pictures.)  I'll post our pancake recipe as well.  Enjoy, maybe start your own Flying Flapjack tradition!

These are ESSENTIAL to Flying Flapjack making and enjoying.  "Brown syrup" for the boys.  And a little gourmet for us adults....So yummy.  Saskatoons are like blueberries to my American friends.

Flying Flapjack Recipe

1 and 1/2 cups of all-purpose flour
4 tsp of granulated sugar
2 and 1/2 tsp of baking powder
1/2 tsp of salt

2 Large eggs
2 Tbsp of cooking oil
1 and 1/4 cups of milk


Combine dry ingredients.  Add eggs, oil, and milk.  Stir just to moisten.  A few lumps are fine.  You can make  your pancakes thin or thick by adding or decreasing the amount of milk.  

Heat your griddle nice and hot, until drops of water dance around on the surface.  Drop batter by 1/4 cup full onto greased griddle.  When edges appear dry and there are bubbles on top, turn to brown other side.  No need to grease pan between batches.  

Slather with butter and top with your favourite syrup.  Just saying....Saskatoon is the best!
